Ingredients:
- 1 cup rice
- 1 lb chicken breast, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add diced chicken and cook until browned, then remove from skillet and set aside
In the same skillet, add chopped onion and minced garlic
Cook until onion is soft and translucent
Add rice to the skillet and toast for 2-3 minutes, stirring frequently
Pour in chicken broth and heavy cream, then bring to a simmer
Return the cooked chicken to the skillet
Stir well
Cover and simmer for 20-25 minutes, or until rice is cooked and creamy
Stir in grated Parmesan cheese until melted and well combined
Season with salt and pepper to taste
Garnish with fresh parsley before serving
